How To Make Homemade Cake Pops

I first began making homemade cake pops when I wrote Sally’s Candy Addiction. In fact, this recipe is published in that book. I wanted to share it on my website as well because I’ve received lots of questions about making from-scratch cake pops. 


Ngredients:

  • 1 box cake mix (flavor of your choice)
  • Ingredients required by cake mix (typically eggs, oil, water)
  • 1 can of frosting (16 oz), flavor that complements your cake
  • Candy melts or chocolate chips (for coating)
  • Lollipop sticks
  • Sprinkles or decorations (optional)

Instructions:

  1. Bake the Cake:

    • Prepare the cake mix according to package instructions.
    • Bake the cake and let it cool completely.
  2. Crumble the Cake:

    • Once cooled, crumble the cake into fine crumbs using your hands or a fork.
  3. Mix with Frosting:

    • Add about 3/4 of the can of frosting to the cake crumbs. Mix well until the mixture is moist and holds together like dough.
    • If needed, add more frosting gradually until you reach a dough-like consistency.
  4. Form Cake Balls:

    • Take small portions of the mixture and roll them into 1-inch balls using your hands.
    • Place them on a baking sheet lined with parchment paper.
  5. Insert Sticks:

    • Melt a small amount of candy melts or chocolate chips.
    • Dip the tip of each lollipop stick into the melted candy/chocolate and then insert it into a cake ball, about halfway through. This helps the stick stay in place.
  6. Chill:

    • Place the cake balls in the refrigerator for about 15-20 minutes to firm up.
  7. Coat with Candy Melts:

    • Melt the candy melts or chocolate chips in a microwave-safe bowl according to package instructions.
    • Dip each cake pop into the melted candy/chocolate, covering the entire cake ball.
    • Allow excess coating to drip off.
  8. Decorate:

    • While the coating is still wet, decorate with sprinkles, colored sugar, or any other decorations of your choice.
  9. Set:

    • Stick the coated cake pops upright into a styrofoam block or a cake pop stand to set completely.
  10. Serve:

    • Once the coating is set, your homemade cake pops are ready to be enjoyed!

Tips:

  • Consistency: The cake and frosting mixture should be moist enough to hold together when rolled into balls.
  • Coating: Ensure the coating is smooth and melted properly for a neat finish.
  • Decoration: Sprinkle decorations while the coating is still wet to ensure they stick.
  • Chilling: Chilling the cake balls before dipping helps them hold their shape and makes coating easier.
